Makes 15 bites
For the bites
1 cup of macaroni
1 cup of oat milk
1/4 cup of vegan margarine
1/4 cup + 4 tbsp of flour
2 cups of vegan cheese
1 tbsp of nutritional yeast
2.5 cups + 3 tbsp of panko breadcrumbs
1/4 cup of water
Up to 2 litres of canola oil – for deep frying
salt and pepper to taste
For the sauce:
2 tbsp of vegan mayonnaise
1 small tbsp of sweet chilli sauce
1 tsp of chilli and garlic sauce
Cook your macaroni in boiling water according to packet instructions then drain.
In a saucepan, melt the margarine and then stir in 1/4 cup of flour gradually to incorporate fully into the margarine. Bit by bit, add the oat milk, stirring constantly with a whisk or wooden spoon. Once the sauce has thickened (but is still runny), add the cheese and nutritional yeast and keep on the heat until the cheese is melted in (as much as vegan cheese will melt). Salt and pepper to taste.
Combine the pasta and sauce and set aside for a few hours (or overnight) until cool. Or eat it now as macaroni and cheese. It’s already pretty delicious. There is no judgement here.
Heat the oil in a pot on the stove (unless you have a deep fryer, then use that). The size of your pot will determine how much oil you use: it needs to be safe and deep enough for your bites to become fully submerged.
Prepare your bread-crumbing station:
1) 4 tbsp of flour mixed with 1/4 cup of water in a shallow bowl (this should be fairly runny: this is how you’ll adhere the crumbs to the macaroni balls)
2) 2.5 cups of breadcrumbs on a plate
3) A tray lined with baking paper
If you resisted the temptation to eat your macaroni and cheese and your pasta is now cool, mix in 3 tbsp of panko breadcrumbs. Then, form the mixture into little balls (about a tablespoon’s worth) and take each ball through your crumbing station: coat in water and flour goop, cover in crumbs, pack into tight little balls and place on the baking paper tray, ready to deep fry.
Deep-fry each ball for about 2 minutes (make sure your oil is hot enough or your balls will disintegrate!) until it begins to brown. Once out of the oil, place on a paper towel lined plate.
Finally, I mixed all of the sauce ingredients together to make a garlicy, chilli mayo to serve with my macaroni bites and it was delicious!
