Vegan chocolate chip cookies

Makes 12


1 cup of plain flour
1/2 tsp of baking soda
1/2 tsp of baking powder
1/2 cup of brown sugar
1/4 tsp salt
1/2 tsp of vanilla essence
1/2 cup of chocolate chips
1/4 of melted margarine
1/4 of oat milk


In a bowl, mix all the dry ingredients. Make a well and pour in the melted butter and vanilla essence. With a fork, start incorporating the butter/vanilla essence and dry ingredients. This probably won’t stretch to wet all of it, that is ok. Gradually stir in the milk to make a dough. Form a dough ball.

Using a tablespoon, portion the cookie dough to make 12 balls. Spread these on a baking paper-line tray. Place in the fridge to cool for half and hour.

Meanwhile preheat the oven to 190°C.

Just before putting your cookies in the oven, squish them with a fork. These cookies won’t spread, so make them basically as flat as you like ’em. Bake for 10 minutes or until just golden.
